It’s peak of summer but you must be wondering why I am sharing soup recipe!!!Let me clarify Then..from last 2-3 days weather is quite cool due to rain and yesterday’s Thunderstorm cools down the temperature completely.It’s a gloomy Friday morning when I woke up and the weather was quite cold (the temperature is 20 degree),so suddenly decided to go for a hot soup.Luckily I have few veggie and few boneless chicken pieces stored in my fridge.

This is a very simple and quick recipe which hardly takes 30minutes including chopping the vegetables and again it’s from my Mom’s kitchen.
It’s a traditional  healthy clear soup recipe which is very easy to digest.In general,we know that the more water a soup contains the less calories .So If you are on diet, then this is the perfect recipe for you.

 Vegetable Clear Soup :
light and nutritious soup made with mixed vegetables and seasoned with chili sauce, salt, pepper and butter.

Ingredients :
1 cup finely chopped carrots/gajar
1 cup chopped capsicum/bell pepper
1/2 cup finely chopped french beans
1 finely chopped big onion
1 tsp finely chopped spring onion(optional)
1 tsp finely chopped garlic/lahsun
3 cups water
1 tsp soy sauce
1 tsp chili sauce
1 tsp black pepper powder(freshly grounded)
1 tbsp olive oil
1/2 tbsp corn flour
2 small cubes of butter(optional)
salt to taste

Method:
Finely chop all the veggies,garlic and onion.The shape depends upon your preference.
Heat oil in a pan. add onions and garlic. saute till the onions are translucent.

Then add the chopped veggies. stir well.
Saute on a medium flame for 2 to 3minutes.

Saute the vegetables

Add water and little salt and cover the pan with lid.Let the veggie cook on a low to medium flame.(It takes almost 10minutes to cook the veggies.But it depends on the size also)
Once they are cooked properly then add soy sauce, chili sauce,black pepper and mix well.
Now check the seasonings and add more salt or black pepper if required.
Pour the soup in a soup bowl and add butter cube and sprinkle some black pepper on the top of it.
serve the soup with soup sticks or toasted bread pieces.

Chicken Clear Soup with veggies:
Chicken soup can be made in so many ways.In this recipe chicken is  mixed with healthy vegetable and seasoned with chili sauce, salt, pepper and butter.

Ingredients :
Boneless  chicken pieces(preferably small)-100gms
1 cup finely chopped carrots/gajar
1 cup chopped capsicum/bell pepper
1/2 cup finely chopped french beans
1 finely chopped big onion
1 tsp finely chopped spring onion(optional)
1 tsp finely chopped garlic/lahsun
3 cups water
1 tsp soy sauce
1 tsp chili sauce
1 tsp black pepper powder(freshly grounded)
1 tbsp olive oil
1/2 tbsp corn flour
2 small cubes of butter(optional)
salt to taste

Method:

Save the chicken stake for later use.
shred the chicken into bite-size pieces.
