Foggy mornings, warm clothes and a bowl of fresh tomato soup is perfect to warm you up on a winter day.This recipe is adopted from my Mom’s Kitchen.The soup is so comforting that I love to make it at least once during every winter season.
The soup is healthy,rich ,creamy,comforting and will help you stay warm and cozy during cold winter months.And the best part is it’s so easy to make that you don’t have to spend more than 15minutes in the kitchen.
So lets begin with the recipe with step by step pictures…
Ingredients:(serves 4 people)
8-9 small tomatoes
8-9 garlic cloves ,finely chopped
1 teaspoon corn flour (corn starch) + 2 tablespoon water
1 – 2 tablespoon butter
1 cup water
1 tablespoon (cream used for serving the soup)
½ tablespoon regular sugar or add as required
1/2 Baguette bread or you can use brown bread or whole wheat bread
freshly crushed black pepper as required
salt to taste
Making Croutons for soup:
Cut the bread into slices and then cut into small cubes.
Place the bread in the oven at 180 degrees C and toast the bread for 10-15 minutes or till its brown and crisp.
Keep the croutons aside.
Preparing the tomato soup:
Wash the tomatoes and keep aside.
In a saucepan take enough water and put the tomatoes in it.Remember tomatoes should immersed completely.
Add pinch of salt to the water and bring the water to boil.
Close the saucepan with the lid.
Switch off the flame and let the tomatoes be immersed in the hot water for 10-15 minutes.
Drain the water and peel the skin of the tomatoes.
Blend the tomatoes to a fine puree.
Now take a pan and add butter,once the butter melts add the chopped garlic and saute until the aroma comes.
Add the tomato pure.
Bring to boil and strain the soup.
Meanwhile dissolve the corn flour in water and keep aside.
Again put the soup in the pan and add salt,black pepper powder and sugar.Cook for 2-3 minutes.
Finally add the corn flour mixture and let the soup become thick.
Once the soup becomes thick switch off the flame and pour the soup in a soup bowl.
Add a butter cube and drizzle some fresh cream on the top of it.
Finally add little black pepper powder and serve with croutons.
