Eggless Chocolate Walnut Brownie(Christmas Baking)

Christmas vibes is in the air.Just 4days to.And my Christmas baking is on full swing.What’s better than a chocolate Walnut brownie to get you in the Christmas mood.Impress your guests and treat them with these delicious brownies.I was looking for some light and simple eggless brownie recipe and then came up with this recipe which is adapted from “Veg recipes of India”.The recipe is very simple,quick and easy to make and the result is delicious.

So lets begin with the recipe…

Ingredients (1 cup = 250 ml):
½ cup all purpose flour/maida or 60 grams whole wheat flour
½ teaspoon baking powder
1/2 cup chopped walnuts
1 pinch salt
1 cup water or 250 ml water
⅓ cup sugar or 70 grams
⅓ cup cocoa powder or 30 grams
4 tablespoons refined/olive oil
½ teaspoon chocolate essence (optional)

Measure all the ingredients and keep them aside.

Preheat the oven at 220 degree C for 5-6 minutes.

Meanwhile grease the baking tin with some oil.

Take a mixing bowl add the flour,chopped walnuts and then add baking powder and a pinch of salt and mix well.
Now we need to prepare the cocoa solution:
Take a pan and add water and bring to boil.Now lower the flame and then add sugar,cocoa powder and then add 4 tablespoons oil.
Mix everything properly so that the sugar should dissolve and the cocoa powder should mix evenly with water.
let this mixture come to a boil.

Switch off the flame and take the coco mixture out.
Add this mixture to the dry flour mixture.
With the help of a wooden spoon mix the dry and wet ingredients properly.
The mixture will be hot, so be careful while mixing and also mix lightly. do not over do. a few tiny flour specks in the batter are fine.

The brownie batter has a thick consistency.However if the batter becomes to thick add a few tablespoons of hot water and then mix again.
Now pour the batter in the baking pan and tap the pan so that the batter spreads properly.

Bake the brownie at 200 degree C for 30-35 minutes.Check in between.If you feel the temperature is bit more you can reduce it to180 degree C.
Remember every oven is different.So temperature and time may vary depends on the oven settings.

Do not over bake as the the top will get dried out and become crusty.

Once the brownie is done take it out from oven and allow it to cool.

Slice and serve the brownie with ice cream.

You can store it for 4-5 days in an air tight container.
