My Christmas baking is on full swing and these days I am baking a lot.The aroma of freshly baked cakes,cookies,Pies filled the entire house.The festivity is all over and I can feel it.I made this pie last weekend and distributed among my friends.They loved it and ask for more. This is a classic Apple pie and trust me once you try it you won’t be disappointed.I made few changes as per my choice.So lets start the recipe…
For the Filling:
2-3 medium sized apples,cut into cubes
1 tablespoons lemon juice
3/4 cup sugar(depends on the sweetness of the apples)
1 teaspoon cinnamon powder
1/4 teaspoon nutmeg powder
1 teaspoon butter
1 tablespoon Black Raisins
1 tablespoon cashew nuts
To make the filling:
Combine the sliced apples and lemon juice in a large mixing bowl.
Take a non stick pan and add butter.
Now add the apples.Saute for 2-3 minutes.
Add sugar,cinnamon and nutmeg powder and cook the apples until soft.
Finally add the dry fruits and mix them.
The filling should not be very dry neither thin in consistency.
Switch off the gas and let the filling cool.
To make the Pie Crust:
Meanwhile make the pie crust.
For the Crust:
4 ounces butter,softened
2/3 cup of caster sugar(powder sugar)
2 cups of all-purpose flour
1/2 teaspoon of salt

Assembling the pie:
Take a pie mold or any other flat dish and Roll out the pie dough.Transfer it to the prepared pan, and trim the edges so they overlap the rim of the pan by an inch all the way around.
By using a fork gently prick the bottom of the pie dough couple times.
Spoon the apple filling into the pie.
Roll out the remaining pastry into circle.You can choose any design as per your choice.I decided to go for thin strips to cover the pie top.
Carefully place the pastry strips over the apples.
Crimp the edges of the pie, then place it in the refrigerator for 10 minutes to firm up.
Meanwhile pre heat the oven at 180 degree C for 5 minutes.
Place the pie on a parchment-lined baking sheet.
Bake the Pie for 25-30 minutes(or more) at 180 degree C or until it’s done.
Let it cool for 30 minutes before serving.
Once it’s cool cut and serve the pie with tea or coffee.
For extra crunch and shine, brush the top crust with milk (or an egg white beaten with 1 tablespoon of water), and sprinkle with coarse sugar.
