Christmas is just around the corner and during every Christmas,I always bake.These days I am making cakes and cookies almost every week however I don’t eat them alone,few of them are for my closed friends and colleagues and rest of them is for my husband.This is the time when I love to indulge everything which is not so healthy whether it’s cakes,cookies,pies,biscuits or It’s our Indian fried food like paratha’s and all. 😛 I don’t mind about gaining weight because it’s festive season so who cares!!!
I have so many Christmas recipes to share with you,as I told you in my earlier post that I baked a lot last weekend and was fully busy in shooting and baking.So stay tuned for lots more (cookies and cakes)recipes.Now coming to this recipe…These simple cupcakes are very easy to make and perfect for all.So if you are looking for some easy festive Christmas cupcakes then this one is just perfect for you.I decided to use no frosting. But you can top these cupcakes with your favorite frosting.It’s Christmas time so I added gems on the top of it to make it look bit attractive and colourful.
So lets have a look at the recipe and step by step pictures…….
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoons baking powder
3/4 cup unsweetened cocoa powder
1/8 teaspoon salt
1/2cup refined oil/olive oil
3/2 cups powdered sugar
1 teaspoon chocolate/vanilla essence
1/2 cup milk
Preheat oven to 350 degrees F (180 degrees C). Line a muffin pan with paper cups.
Meanwhile sift together the flour, baking powder, baking soda, cocoa and salt. Set aside.
In a large bowl, cream sugar and oil until light and fluffy. Add the eggs one at a time, beating well with each addition, then add the chocolate essence.
Add the flour mixture and mix gently(do not over mix).
Add milk and mix properly. Fill the muffin cups 3/4 and add gems on the top.
Bake for 15 to 20 minutes in the preheated oven, or until a toothpick inserted into the cake comes out clean.
Let the cup cake cool and then enjoy it.
