Merry Christmas to everyone!!!
Hope you have a wonderful Christmas celebration. I’m bit late to be precise 3days late,since I had planned to blog this on Christmas day but somehow couldn’t make it due to work pressure and some other engagements.
Christmas to me is a time of celebration, which includes spending time with my family,friends and loved ones,decorating the house,giving gifts,baking and distributing cakes,cookies and baked goodies among my friends and loved ones.So this year is also no exception I baked a lot and distributed cakes and cookies among my closed friends.And this delightful cookie recipe is one of my Christmas baked goodies and it’s just perfect to get you in the Christmas mood.It’s simple,easy and delicious.
So lets begin with the recipe….
2 1/4cups all-purpose flour
3/4 cup granulated sugar
3/4cup packed brown sugar
1cup coarsely chopped almond
2 cups semisweet chocolate chips
1cup(100gms)butter or margarine, softened
1teaspoon vanilla essence
1teaspoon baking soda
Pre heat oven at 180 degree C.
Line a parchment paper on the baking tray and keep aside.
Mix sugar(both brown and powdered) and butter and beat well.
Add egg,vanilla essence and mix.
Take another bowl and stir flour, baking soda and salt and mix all the dry ingredients.Add chopped almond and chocolate chips.
Now add the dry ingredients in the butter and sugar mixture and using hand make a soft dough.
Cover the dough with muslin cloth or cling wrap and rest for 15-20 minutes in refrigerator.
Roll the dough into small balls. Using hands, roll each cookie into a small ball and then flatten them lightly with your fingers.
Place the cookies on a baking tray 1 inch apart and bake at 180 degree C for about 15-20 minutes,Do not let brown.
Let the cookies cool in a wire rack.
Once cooled enjoy it with cup of tea or coffee.
You can store the cookie in air tight container for 10-15 days.
