Cherry Cookies for Christmas

Christmas Countdown Started!!! Just 2 days left to Christmas!I am very much excited as it’s one of my favorite festival.I am all set for Christmas..Are you done with the preparation???So far I have made few batches of cup cakes,muffins,fruit cake and cookies and I am going to continue my baking journey until Christmas Day!So stay tuned for more surprises…

These pretty pink festive cookies are just perfect for Christmas.It’s just added extra charm to my Christmas baked goodies tray.Apart from the color it’s very tasty also.It’s quite delicate and soft,buttery and melt in mouth.I decided to drizzle melted white chocolate to give it a festive touch.However you can skip the chocolate to avoid extra calorie.

 

Ingredients:
2 1⁄2 cups all purpose flour
3/4 cup unsalted butter/margarine(80gms)
3/4 cup sugar
1 egg
1 teaspoon vanilla essence
1 pinch of salt
1 teaspoon Baking Powder
10 ounce jar cherries, drained and roughly chopped
Red Food colour (optional)
For garnishing:
White chocolate
sugar sprinkles
Fresh cherries

Method:
Preheat the oven to 180 °C(356 °F)and line cookie sheets(parchment paper)on a baking tray.

In a large bowl sift flour,baking powder,salt and keep aside.

Meanwhile chopped the cherries or you can use grinder.But make sure we don’t want paste so grind coarsely .

Take another bowl and combine butter/margarine,and sugar until light and fluffy.Add egg and mix again.

Then add vanilla extract and mix properly.


Now add the dry ingredients and Stir in chopped cherries and mix properly.


Make a smooth dough.


Cover the dough with cling wrap or cloth and rest the dough for 1hr or at least 30 minutes.


Roll the dough into small balls. Using hands, roll each cookie into a small ball and then flatten them lightly with your fingers.

Place the cookies on a baking tray 1 inch apart and bake at 180 degree C for about 15 minutes,Do Not Let Brown.

Let the cookies cool in a wire rack.


Once cooled drizzled some melted white chocolate and let the chocolate set.


Serve them once the chocolate is firm.

Notes:

  • Be extra careful while baking these cookies.
  • Because overbaking can ruin the colour and texture of the cookie.And you will get a hard cookie.
