Hello everyone!!!Have you started your Christmas Baking??If not then I have an amazing,irresistible and easy muffin recipe for you.It’s a butterscotch flavored breakfast muffin which is loaded with lots of black raisins ,almonds and dark chocolate chunks.And it’s actually very quick and easy to prepare,kind of “Grab ‘n go Breakfasts” recipe.However it’s amazing for Christmas time also.
I have already mentioned in the earlier post about my current work schedule and despite of that somehow today I managed some time and cooked a lot after a long time.I baked 3-4 types of items including breads,cake,muffins etc..And I promise if I gets free time surely I will try to update those in my upcoming posts.
As we all know that breakfast is considered the most important meal of the day.Thus we should not skip it.So basically the Idea of grab n go breakfast is if you are running out of time or if you have limited time still you don’t have to skip your breakfast.These days I don’t have time for breakfast so I baked a lot of muffins so that I can eat them while I am traveling or even I can put them in my handbag and eat them in between free time or even I can enjoy them as snack.The recipe is also so simple that you can bake a lot of batches and store them for at least a week.
Before get into the detailed recipe I just wanted to mention the basic difference between muffins and cup cakes.I have seen often people gets confused between muffin and cupcakes.Even some people thinks cupcakes and muffins are the same thing.So let me clarify first.
Cupcakes are mini form of cakes and mostly topped with creamy, delicious frostings.Muffins are relatively healthier option compared to cupcakes and that’s why it’s often consumed as breakfast. Muffin is less sweet in taste,and mostly made with whole wheat flour(or other wheat flour such as oat flour), and is more likely to be loaded with fresh fruit or nuts or chocolate chips or dry fruits.Muffin can have savory version too.The consistency of the batter is also differs.I am not going to elaborate more, in sort Muffins are relatively healthier option than cup cakes.
So lets jump into the recipe…
I ended up making 12 muffins with the following measurements..
1 cup whole wheat flour/Ata
1/2 cups all purpose flour/Maida
3/4 cup powdered sugar or brown sugar/chini
1 tsp baking powder
1/2tsp baking soda
1 tsp butterscotch essence
1/4 cup dry fruits(Dark California Raisins, chopped almonds)
2 tablespoon dark chocolate chunks(or dark chocolate chips)
1/2 cup olive/refined oil
Preheat oven to 180°C. Grease muffin pan with cooking oil.
Sift whole wheat and all purpose flour into a large bowl and add baking soda and baking powder.Keep aside.
Meanwhile take another bowl and add powdered sugar and oil and whisk until the sugar dissolves.stir in sugar.
Now add eggs one at a time and whisk until light and fluffy.Finally add butterscotch essence and mix properly.
Now Add to flour mixture into this.Now add dry fruits and chocolate chunks and mix properly. Do not over-mix.
Divide the mixture evenly between muffin pans until three-quarters full. Bake at 180°C for 15-20 minutes or until golden in colour. Cool for 10-15 minutes in a wire rack.
You can drizzle some chocolate or caramel sauce on the top of the muffin and serve.Or simply enjoy them with hot cup of tea or coffee like I prefer.
The measurement based on 150ml cup.However you can use any cup,but just make sure that you are using the same cup for measuring all the ingredients.If your cup is bit bigger in size then just increase the amount of baking powder and add more eggs.
I like less sweet so according to my taste I mention the sugar but you can add 1 cup if you like bit sweeter version of it.
To make the muffin healthier I prefer to use whole wheat flour and little all purpose flour but you can use all purpose flour or any other flour instead of whole wheat flour.
I don’t have chocolate chips in my pantry so I have used dark chocolate and chopped them into big pieces.
The muffin’s are quite low in calorie so can be enjoyed 1 or 2 at a time as breakfast.
