Black Grape Cup Cake

I love to bake cakes during winter especially for Christmas.Have you started your Christmas baking yet?So far I have made few batches of cup cakes,fruit cake and cookies and I am going to continue my baking until Christmas!So If you are looking for some interesting Christmas recipes then stay tuned for more. I always like to bake simple cakes which can be accompanied with a cup of tea or coffee. This time tried with a little variation from and baked this fresh Black grapes cup cakes which is definitely best eaten with a cup of tea of coffee.


Market is flooded with black grapes and that’s why decided to go for black grape cake.So lets have a look at the simple Black grape cake recipe…

Ingredients:
1 1/2 cups all-purpose flour(Maida)
1 teaspoons baking powder
1/4 teaspoons baking soda
2 eggs, at room temperature
2/3 cup granulated/powdered/caster sugar
1/2 cup refined oil/100gm butter
1/3cup Fresh Black Grapes(Preferably seedless)
1 teaspoon vanilla essence
1 tablespoon granulated/powdered/caster sugar(For garnishing the cake)

Method:
Preheat the oven to 350 degrees F/180 degrees C .


Shift the flour, baking powder,baking soda and salt in a medium bowl.


Take another bowl and Beat butter/oil and granulated sugar in a with help of of a hand mixer on medium-high speed until it’s become pale and fluffy(for about 2-3 minutes).
Add eggs one at a time and beat again.


Now add vanilla essence and beat for half a minute.


Add the grapes and then add the flour mixture to it and gently fold until everything combined (do not over mix). Add milk and mix again.


Pour the mixture in a cup cake molds and on the top of the cake batter put some fresh grapes.


Bake the cup cakes at 180 degree C for about 15-20 minutes.


Transfer the cake in a wire rack and allow to cool.


Once cooled dust some caster sugar on the top of the cake and enjoy.
